This is a heat exchanger used to cool the wort before it goes into the holding tank.
It is made of thin plates bolted together. Holes in the plates allow cold water and hot wort to transfer heat to each other through the plates.
The water going in is near freezing and comes out very warm. The wort cools from near boiling to around 100 degrees.
